You will need:
4 medium-sized baking potatoes, for example desiree or romano
2 tablespoons olive oil
1 tablespoon Cajun spice seasoning
100g mature Cheddar cheese
4 spring onions

Preheat the oven to 225°C,450°F, gas mark 7. Scrub the potatoes and then cut into wedges about 1cm thick.
Place potatoes in a clean plastic bag and add the oil and spice seasoning. Seal and shake well to mix.
Tip out on to a large baking sheet lined with baking parchment and space out evenly. Bake for 35-40 minutes, turning halfway through, until tender and golden. Meanwhile, finely grate the cheese.
Trim and chop the spring onions. Cover and chill until required.
To serve, pile some wedges on to warmed serving plates and sprinkle each portion with a little cheese and a few spring onions.
