To my London´s friends. Eve´s pudding



My year in London, at Lakefield, was a very good experience, I learn so many things and made lots of good friends, so I would like to have space for them, and to share some recipies that I learned there.
Remember, TMI (la tía mail), Fredy(our chicken friend), the Oven on (el horno grande)...so much laugh.
Eve´s pudding

Ingredients:

Cake
Butter500 g
Caster sugar 500 g
Eggs 8
Self-rising flour 500 g

Filling
Cooking apples 500g
(Apples have to be cored and sliced. Leave to soak in water with a bit lemon juice).
Sugar and cinnamon for sprinkling.


Method:

Beat the butter and sugar until light and fluffy.
Slowly add the eggs one by one and make sure the mixture comes together before adding another egg. (Adding too quickly could curdle the mixture).
Gradually fold in the flour.
Drain the apples.

Grease the dish and fill it half way with sliced apples, generously sprinkle with sugar and a little cinnamon.
Cover with cake mixture.
Cook at 190°C for approximately 30 minutes. (If it is golden but still raw inside, lower the oven a little and cool for a few more minutes).
Dredge with icing sugar and serve hot with custard or cream.

Because of the apples when testing the skewer may not draw out totally clean.
